Chettinad Vellai Kurma Recipe




Ingredients:

• 2 Onions, chopped 
• 1 Tomato, chopped 
• 1 Potato, cut into pieces 
• 1 Carrot, cut pieces 
• 3 tbsp Green Peas 
• 1 cup Pumpkin 
• 1 Brinjal, cut into pieces 
• 2 tsp Cooked Beans 
• 5 Green Chilies 
• 2 Bay Leaves 
• 1 tsp Dalia Flour 
• 3 tsp Fresh Grated Coconut 
• ½ tsp Ginger Garlic Paste 
• ½ Garam Masala 
• 1 cup Curd 
• ½ tsp Cumin Seeds 
• ½ tsp Fennel Seeds 
• 10 Cashews 
• ½ tsp Turmeric Powder 
• 2 tsp Coriander Powder 
• Salt, to taste 
• 1 tsp Ghee 
• 3 tsp Oil 
• 5 Curry Leaves 
• 2 tbsp Chopped Coriander Leaves, for garnishing 
• 1 tsp Coconut Oil, for garnishing

Method:
• Take a bowl and grind grated coconut, dalia flour, cashews and curd in it to make a smooth paste. Keep it aside.
• Soak the beans and cook it in pressure cooker till it becomes tender. Keep it aside.
• Take a pan and heat oil and ghee in it. Put cumin seeds fennel seeds and curry leaves in it.
• When the seeds start to crackle, put bay leaves, chopped onions and green chilies in it. Fry well.
• When the onion is translucent, put ginger garlic paste in it and saute it till it looses its raw smell. Mix it for few more minutes.
• Put chopped tomato in it and saute again. Add carrot, cooked beans, potato, brinjal, green peas and pumpkin in it along with turmeric and coriander powder and saute it for few more minutes.
• Add 2 cups of water to this mixture, cover it and cook it for 10 minutes on medium flame.
• Now, add prepared coconut- curd paste along with garam masala and salt in it and let it cook for 5 minutes.
• Sprinkle coconut oil on it and garnish with coriander leaves. Serve hot with Idli , Appam or Idiappam.
