Erusseri Recipe


Ingredients:

• 1/2 Cup cubed Matthan (Yellow Pumpkin)
• 1/2 Cup cubed Chaenai (Yam)
• 1 1/2 Cup grated Coconut
• Cumin seeds
• 2-3 Green chillies
• Salt to taste
• Coconut Oil
• Urad Dal
• Mustard
• few Curry leaves
• 2-3 Red Chillies
• Pepper Powder
• Pinch of Turmeric Powder

Method:
• Grind coconut, cumin seeds and green chillies without water to a fine paste. Keep it aside.
• In a pan, Boil yam with some water, turmeric and pepper. Cover the pan and cook it on low heat. When Yam is 3/4th cooked, add pumpkin and allow it to cook.
• Heat oil in a pan add mustard seeds, allow it to splutter.
• Add urad dal, Red chillies, Curry leaves.
• Add the coconut paste.
• Add the cooked Yam and Pumpkin along with salt.
• Cook on low flame until gravy becomes thick.
• Serve Erusseri hot with Rice.
• Can prepare Erusseri with various vegetables like Chaenai (Yam), Matthan (Pumpkin), Vazhakkai (Raw Banana), Pudalangai (Snake Gourd)
