Coconut Rice Recipe


Ingredients:

• 4 Cups cooked Basmati rice
• 2 Cups grated coconut
• 1 tsp Mustard seeds
• 1 tsp split Urad Dal
• 1 tsp Channa Dal
• pinch of Asafoetida
• 4 Green chillies chopped
• 2 Red chillies
• 4 tbsp Ghee
• few Curry leaves
• Roasted Cashewnuts
• Salt to taste

Method:
• Heat Ghee in a pan. Add the mustard seeds.
• When they splutter, add urad dal, channa dal, red chillies, asafoetida and fry for a few seconds till they turn light brown.
• Add the chopped green chillies, curry leaves and the grated coconut. Saute on medium / low heat till the coconut is light brown in color.
• Add the cooked rice and salt to the coconut mixture and mix well. Keep on low heat till the rice is flavored with the coconut mixture.
• Garnish with fried cashewnut bits and Coconut rice is ready to serve with Avial, Vegetable Stew, Appalams/Pappadams.
